You could get a paint brush and cover the whole area in greese then through a bucket of dirt over it. It may not help with your problem but it will make the rest of us feel better about the look of our carbs.
You do need a little slack in between the pedle moveing and the carb linkage. If it moves imediately, as you say, then thats your problem. Also I cant see much lubrication on any of the joints. It all looks too clean. I'm guessing you want it to look clean but you do need some greese on the joints.

In the second shot of the carbs, your pointing at a nut, make sure this and the one on the other end are tight.
one of mine was slightly loose, which meant the ball and socket joint was binding when moved and
made the throttle appear tight elsewhere!
If you imagine, the looser the nut, the closer the socket part of the joint in the end of the nut
is to the ball part of the connecting rod/linkage and therefore tighter
