Any advice on the best way to proceed with the above?

Assume you can just put normal screws back in afterwards?

I'm planning to attack mine with a drill or grinder, whatever I can get in there without damaging anything important.

Interested to hear the voices of experience!

I’ve done this a couple of times before if you get a flat head screwdriver roughly the size if the sheared bolts and place in the centre of said stud to be removed, a few gentle taps while turning anti-clockwise they will come out easily you should be able to get shear bolts to replace hope this helps

I just put some torx head bolts back in mine or you could use Allen key head bolts etc
