A lot of work tbh. If the paint on them is sound more or less, I’d just degrease, and then regrease so they're running smoothly. They’re not seen to any great extent - spend your time on things that are!

Rub them down then - spray them in that dark green and reinstall - don't bother taking them apart though ... just mask up springs etc

Just to exacerbate your perfectionism, if I remember correctly, the seat rails aren’t actually painted - that olive green is a type of electroplating.
On the plus side, that means you could talk to your plater and see if they can replicate that finish, and then get the rails done without disassembly.
